After spending the last 30 months slumbering inside a 14-year Old Fitzgerald barrel, this monster emerges balanced while retaining all the barrel's character. As this is our first time getting our hands on Old Fitzgerald barrels, we were excited to see the wheated bourbon's expression bring a little more fullness and sweetness to the beer's body. The flavor is reminiscent of a marshmallow that you’ve intentionally lit on fire while making s’mores for maybe a little bit too long before blowing it out. We’re reveling in the unadulterated, pure oak expression in this complex yet approachable stout.

Green Knuckle is our new annual series of single-variety wet hop beers, brewed to showcase each cultivar’s vibrant and radiant character. Citra in wet hop form is a completely different expression from what most people have become accustomed to with this hop. Straight from the bines of BC Hop Ranch in Woodburn, Oregon, the full and unadulterated cones of Citra deliver a sensory overload of the delicate thiols and terpenes often lost during the kilning process. The beer exudes bright notes of key lime, tangerine, and vibrant passionfruit all layered on a canvas of overripe Alphonso mango. Beyond the juicy/fruity aromas lies the subtle yet unmistakable “green” characteristics of wet hops. Evoking notes of freshly cut California Sweetgrass and just a touch of sticky cannabis. 6.1% ABV

Collab with Weldwerks Brewing Co. After imbibing the rich viscosity that is Midnight, you may or may not slip into a dangerously comatose state, in which case you’ll need to revive yourself with Monsters at Dawn. To this particular 10 year Vermont Whiskey barrel, we added coffee roasted by our friends at Modern Times Coffee: a blend of Idea Machine and Bourbon Barrel-Aged Colombian. The coffee adds delightful notes of tangerine, toffee and an Old Fashioned cocktail. To balance and enhance the flavor, we added 25lbs of house-toasted coconut and 1.5 lbs of Ugandan Vanilla beans

You’ve encountered the colossus before, but this time, it emerges double-headed from the depths. We began our fourth iteration of Double Barrel Here Be Monsters by aging the stout for 14 months in hand-selected, 9-year EH Taylor small-batch bourbon barrels. Afterward, we patiently waited while the beer lay resting in BLiS maple syrup bourbon barrels for 11 more months. We’re excited to unveil another iteration of this beer as we experiment with common and unusual finishing barrels for our beloved flagship Imperial Stout. Aged 14 months in 9-year EH Taylor small batch bourbon barrels, followed by 11 months in BLiS maple syrup bourbon barrels.

Our Denver taproom is nestled just a few feet off Colfax Ave. In fact, when we first signed the lease, we had a Colfax address (until the Post Office changed it). This iconic street is littered with local landmarks, from Casa Bonita and the Capitol Building to the Squire Lounge and the Bluebird Theater. When we bought a building precisely four miles east at Colfax and Florence in the Aurora Arts District, we knew we had to brew a beer to celebrate the Ave we know and love. This American Corn Lager is our ode to Colfax. It’s exactly what we want to drink at our local dive bar, concert venue, or park hang. Corn is often (negatively) associated with mass-produced beers, but its use in this recipe helps dry out the pilsner malt and showcase the delicate hop bill.
