We’re not suggesting coconuts migrate, but they were able to travel from a temperate zone and right into this Oatmeal Stout. The mash, which was 16% oats and six different types of English barley varieties, lays down a pillowy soft base with dark chocolate and caramel flavors. One hundred total pounds of two types of coconuts add toasted bread and nuttiness, which combines with the malt flavors to create a candy bar like sweetness. You’ll love this no matter your quest!

Brewed with Root + Branch. Anthony from Root + Branch found some time to come through and squeeze in this collab with us around getting his new brewery open in Long Island. Citra hot side including Citra T-90's and Incognito plus equal parts Citra, Riwaka and Motueka in the dry hop on our All —- Everything series malt base.

In the fall of 2019, we were fortunate to host our friends at J Wakefield Brewing for an Imperial Stout brew. Most of that batch was blended with a small amount of another base stout aged in Mezcal Reposado barrels. We packaged it as Humo y Espejos & Humo y Espejos with Fuego. Fuego went on to win a gold medal in the chili beer category at the Great American Beer Festival in 2021. Luckily, we had two oak barrels of this batch reserved for further aging. We have something extraordinary after an additional 12 months in oak (32 months total). These were the last Woodford Reserve Chocolate Malted Rye barrels in our collection, and we wanted to do something unique with them as a follow-up to Humo y Espejos with Fuego. We settled on a blend of guajillo and two different types of chipotle peppers, some beautiful Filipino cacao nibs, and a unique hybrid varietal of Mayan vanilla beans. The chilis were wood-fired in-house over a flame of bourbon barrel staves. These flavors combine seamlessly as raspberry chipotle jam, Mexican drinking chocolate, and ganache.

Bourbon Barrel-Aged Apple Pie-inspired English-Style Barleywine • 14% ABV • We built this high-gravity sipper from a selection of standout barleywine barrels pulled from the far reaches of our wood cellar—casks already humming with layers of toffee, caramelized fruit, and warm baking spice. A brief recirculation through Ceylon cinnamon and a delicate addition of apple enhance the beer’s malt complexity and bring its pie-like character into sharper focus. Glints of ruby sparkle through its deep amber pour as aromas of brown sugar, flaky pie crust, and spirit-soaked oak rise from the glass and give way to a rich, chewy body of vanilla-laced pastry and stewed fruit. It’s a dessert-inspired release rooted in the magic of Chevallier malt and finished with just a little bit of stardust.

For our first-ever release of Here Be Monsters with Cacao, we wanted to select a barrel that showcased layers of chocolate on its own before conditioning it on one of our favorite cacao nib origins, Ghanaian, from Ethereal Craft Chocolate. To achieve this, we elevated the percentages of roasted malts—English chocolate, pale chocolate, and black malt. Tasting notes: Ghirardelli Brownie Batter, Lindt Truffles, and 87% Cacao Dark Chocolate.
