We are excited to announce that we are finally ready to open our doors in Aurora with a pop-up taproom - located in the heart of the Aurora Arts District, just four miles down Colfax from our original Congress Park location. Nestled in between our brewhouse and expansive barrel collection, this cozy taproom offers an up-close-and-personal Cerebral experience Friday through Sunday.

This taproom features a draft list of both year-round and limited-release beers, plus merchandise and to-go beer to take home with you. We’ll keep our website (link in bio) updated with the current draft and package offerings, operating hours, as well as info on public transportation and parking.

We’ll be open at Aurora beginning THIS WEEKEND, March 24-26! We can’t wait to celebrate this new space over a beer with you soon.

We had just a little bit of fun on the brewhouse this week 🤓 In preparation for our annual collaboration celebration, In Symbiosis With... we brewed a couple collabs with our friends at @knottedrootbrewing and @omfbrewing. We can hardly wait until April 8 to try these beers. Any guesses on what we brewed with them?

Introducing our first Endeavor member-only bottle release! A project many years in the making, both of these beers and the individual barrels they’ve been resting in were carefully selected for this uniquely special occasion to make their debut. We can’t wait to finally share these bottles with our members.

𝙏𝙍𝙄𝙋𝙇𝙀 𝙈𝘼𝙎𝙃 𝙋𝘼𝙋𝙋𝙔 𝙑𝘼𝙉 𝙒𝙄𝙉𝙆𝙇𝙀 𝙃𝙀𝙍𝙀 𝘽𝙀 𝙈𝙊𝙉𝙎𝙏𝙀𝙍𝙎
11.7% Single Barrel Aged Stout

In the fall of 2019, we set out to push the boundaries of our Here Be Monsters recipe by adding an additional mash and raising our total boil time from 8 to 28 hours. This achieved a greater depth of flavor and extra silky mouthfeel. After resting for 39 months, this particular barrel separated itself from the others and we couldn’t resist showcasing it on its own.

15.1% Single Barrel Aged Stout

In order to seamlessly meld our Here Be Monsters base with these beautiful GTS bourbon barrels, we added a generous portion of both malted and chocolate rye to the base beer. At 31 total months of aging, this cask stood out to us as the most balanced, refined and unique of the lot.

Meet Aaron, Cerebral Brewing Sales Team Manager! Aaron is well-traveled in the beer industry - working in 4 states, from California to D.C. With experience in many different roles, Aaron brings a plethora of knowledge to Cerebral. He wears many hats here, from managing our local beer deliveries to expanding our distribution footprint to new states.

He got a pretty unusual start in the industry with his first job at a corn hole factory. After taking advantage of the leisurely side of that job for a couple years, he decided to dive into craft beer full time and accepted a sales position near his stomping grounds in Orlando, FL.

Aaron is known around the brewery as our “idea guy” and his contributions fuel many of the creative projects we do. Appropriately, he says his favorite part of his job is dragging his co-workers into pitch meetings to tell us the idea he had at 2am last night.

If he wasn’t working at Cerebral, Aaron would be long distance hiking and trying to find “tight places to crush beverages” via his side hustle, @crushquest. He dreams of one day living in a hut in the mountains with “way too many pitbulls.”

Aaron’s hot take? Charizard is the best Pokemon - he will absolutely argue with you about this in the comments.

Using rice in beer has gotten a bad rap. Stateside, we think of macro beers made en masse, but Japan has a long tradition of using rice the right way in the brewing process - achieving clarity, crispness and subtle sweetness. In our opinion, it’s also a perfect platform for showcasing the unique qualities of the hops and the lime zest we’ve employed in Paper Lantern with Lime.

This isn’t just an average Wednesday - today we’re brewing the 100th batch at our Aurora Arts facility!

It’s only fitting that this brew happens to be Rare Trait, the IPA that has been with us since the beginning. Feeling grateful today for the growth we’ve been able to achieve with our talented team.
