Barrel Aged Imperial Stout with Cacao

Aged 27 months in a single 13 year Old Forester Bourbon barrel.

For our first ever release of Here Be Monsters with cacao, we wanted to select a barrel that showcased layers of chocolate on its own before conditioning it on one of our favorite cacao nib origins – Ghanaian from Ethereal Craft Chocolate. In order to achieve this, we elevated the percentages of roasted malts – in the form of English chocolate, pale chocolate and black malt.

Tasting Notes: Ghirardelli brownie batter, lindt truffles and 87% cacao dark chocolate
