Get to Know Our Jack of All Trades, Billy!

Many of the things that make Cerebral Brewing function, that make it all possible, often go unseen. Behind every pint poured, there’s a late night brewing shift, an early morning canning run or a long day lifting kegs. So, these staff highlights are our opportunity to shine some much deserved light on some of these unsung heroes. And Billy is just the kind of guy we’re talking about. Whether he’s behind the wheel working operations or behind the bar serving customers, Billy’s quiet, kind influence flows across multiple departments here. He deserves many things…praise, accolades…and a better football team than the Jaguars.

1) HOW/WHY DID YOU MAKE YOUR WAY INTO THE CRAFT BREWING INDUSTRY?

I actually started in Craft Coffee back in Tampa, working for a roastery called Buddy Brew. I started out as barista there but worked my way into the BOH as the company began to grow. At the time, I was helping with packaging beans and cold brew, while also doing deliveries. Kind of like I do here. I was a little bit of a super utility guy. Then I moved out here 2 years ago.

2) WHAT DO YOU ENJOY MOST ABOUT WORKING IN CRAFT BEER?

THE COMMUNITY!! We are just one big goofy fun family that was brought together because we love beer!

3) WHAT DO YOU THINK YOU WOULD BE DOING IF YOU HAD NOT JOINED THE CEREBRAL TEAM?

Probably doing something involving history. I was always kind of a history nerd, so maybe a high school history teacher or something like that.

4) WHAT IS ONE PART OF THE LOGISTICS SIDE OF A BREWERY THAT YOU THINK GOES UNNOTICED?

Route planning! You want to make the most of you time but also ensure you are not wasting too much time getting from spot to spot. The beer needs to be places!

5) WHAT DO YOU ENJOY DOING WITH YOUR TIME OUTSIDE THE BREWERY?

I love being outside and in the mountains. It’s part of the reason I moved here from Florida. Whether I’m doing a little hiking with my wife and pup, or posting up at a lake doing a little fishing.

6) FAVORITE BEER OF ALL TIME

Depends on the situation. If we are talking craft beer it’s definitely Jai Alai from Cigar City. That beer still crushes in my opinion. But I also will crush a Miller Lite anytime of the day so that’s my go to when I’m outdoors or at a ballgame .
