As February draws to a close, we’re revisiting an old-world brewing ritual born of frigid winters and cold cellars. Long before central heating, thermostats, or global warming, there was Bierstacheln. A fire-heated steel rod is plunged directly into the glass, caramelizing residual sugars on contact. The beer sizzles, the foam surges, and the flavors transform in real time. If it sounds strange, that’s part of the appeal.
