True to our ethos, this beer was born from one-off experimentation. During our Vantabrews adjunct tasting session, we trialed a variety of stout infusions, but the black walnut blend was a standout for brewers and customers alike. We were excited to explore this new (to us) ingredient, and set about creating finished beer to showcase its complexity. We selected a Here Be Monsters base with a slightly higher proportion of wheat int he mash for added body. It was aged extensively in one of our favorite barrel types, wheated Bourbon barrels, which tend to add soft vanilla sweetness to the beer. To finish it off, we hand toasted the raw black walnuts to temper their woody intensity and bring out richer, nuttier, carmelized flavors.
