A blend of Celestial Origin aged in 16-Year George Dickel Whiskey and Here Be Monsters aged in 6-Year Laws Four Grain Bourbon Barrels for 26 months each. Conditioned on Comoros Vanilla Beans.

โ€œWe recently discovered that our cellar held two single barrels each of Here Be Monsters, our flagship Barrel Aged Imperial Stout, and Celestial Origin, our Barrel Aged English Barleywine. Marrying stout with barleywine is a new approach for us, but after an initial test blend we quickly realized this concept had legs. The sweet dark fruit and brown sugar from Celestial Origin complements the dark chocolate and espresso notes from Here Be Monsters to produce something so enjoyable, we wanted to create an entirely new brand in our barrel aged lineup to celebrate this style. This variation is conditioned on Comoros vanilla beans – a new variety to us, but one weโ€™re quite pleased with. Weโ€™re getting notes of s’mores, orgeat, Raisinets and dried figs.โ€ – Sean

Here Be Monsters is a beer weโ€™ve always felt truly showcased the power of barrel-aging and the impact these works of distilled art can have on the final product we produce. For this round of our Single Barrel Select series, we chose barrel #323, a 14-Year Elijah Craig Bourbon Barrel. Confront the monster now or waitโ€ฆ you decide.

โ€œFrom its inception, this beer has lived up to its name. Or perhaps the lesson here is be careful what you name your creations….an enigmatic creature that lives โ€œbeyond the mapโ€™s edge.โ€ And itโ€™s that tagline that has continually inspired us to push further into uncharted territory, further out to sea. This voyage spent 24 months in a single 14-year Elijah Craig bourbon barrel. We’re getting notes of baker’s chocolate, amaro and affogato.โฃโฃโฃโ€ – Sean
