Brewer’s Notes: This is the last remaining barrel from a collaboration we brewed with American Solera to celebrate the opening of our Aurora Arts facility. Drawing inspiration from their Barrel Aged Stout program, we layered in a variety of specialty malts and turned to one of their favorite barrel varieties, Balcones Texas Rye Whiskey, to do the heavy lifting. After forty months, the base beer had developed into something genuinely special. But rather than let it stand alone, we wanted to have some fun. We landed on a set of adjuncts that neither of us has explored much in this format: Oreos, marshmallow, Ecuadorian cacao nibs and Tahitian vanilla. The result is essentially a late-night snack in beer form, and we have no regrets.
