Brettanomyces Saison with Guava - 6.7%   Variations on a theme are like little alternate dimensions, the what-could-have-been scenario you always wonder about later. So, that was what we did with Ripping Through Dimensions, our stainless conditioned, 100% Brettanomyces Saison. By using Ripping as our base, we explored all the other realities possible when the complex Brett flavors are melded with a different complimentary fruit, opening up new vistas and parallel realities. In this version, we added guava puree and bottle conditioned it for 6 additional months.  GRIST: Pilsner, Colorado Wheat, Colorado Oats  HOPS: Sterling, Galaxy, XJA2/436

Oak Aged Biere de Garde - 8.9%   In the Rocky Mountains there exists a truly unique specimen, a colony of individual quaking aspens sharing the same underground root system, bound and determined to coexist as one organism. Under these golden boughs, depth and complexity entwine and time yields wonder. Feels like a fitting metaphor for this nuanced Biere de Garde. Woodsy, autumnal time-born tannins mingle in with honeyed, floral Brettanomyces to create a beer that’s more than the sum of its parts.  GRIST: Pale, Wheat, Dextrine, Vienna, Turbinado Sugar  HOPS: Sterling, Styrian Goldings

In the Rocky Mountains there exists a truly unique specimen, a colony of individual quaking aspens sharing the same underground root system, bound and determined to coexist as one organism. Under these golden boughs, depth and complexity entwine and time yields wonder. Feels like a fitting metaphor for this nuanced Biere de Garde. Woodsy, autumnal time-born tannins mingle in with honeyed, floral Brettanomyces to create a beer that’s more than the sum of its parts.

HOPS: Sterling, Styrian Goldings

Oak Aged Wild Ale with Passionfruit, Mango and Vanilla (Collaboration with Almanac Beer Co) - 9.1%   Unless you’re living in a Philip K. Dick novel, then time only goes one way. Forward. And time was the key with this Almanac collaboration. We put our IPA collab from 2017 and a blend of each of our house cultures in a neutral oak time machine and set the date for six months hence. What came out on the other side required just a little something extra. Not Doc’s beer cans or banana peels, but luscious passionfruit, mango and a hint of Madagascar Bourbon vanilla. Phasers were set to stun on this one.  GRIST: Pilsner, Spelt, Oats  HOPS: El Dorado, Citra, Galaxy, Motueka  OTHER: Passion Fruit, Mango, Madagascar Bourbon Vanilla

Does time define its taste or circumscribe its subtelties in the corral of common consensus? Or do some wild stallions test the tension on the line, hauling wholeheartedly against the grain and gaining ground on the limits so defined? In dynamism is derivation formed, between grape and grain or barrel and bottle, harmony hums no lonesome tune. Baere Brewing takes the baritone, while we seek out the melody.  GRIST: Pilsner, Oats, Wheat  HOPS: Citra  OTHER: Barbera Grape Must

But somewhere down the line, chaos changes the cadence and a new meter emerges. Metaphors galore and lessons to be learned, folks. Today’s limitation could be tomorrow’s liberation, and in this industry evolution is a must. So, expect the unexpected with this one. Imagine oaky California Chardonnay and toasted coconut notes followed swiftly by delightfully divergent tones of bright, clean acidity, lemon peel and white peach.  GRIST: Pilsner, Wheat, Oats, Rye  HOPS: Sterling, Styrian Goldings  OTHER: Meyer Lemon, Madagascar Bourbon Vanilla

Imperial S’mores Stout (Collaboration with Mikerphone) - 10.5%   Everyone has their method. Wrapped in foil and nestled in the coals. Precariously balanced on an unburnt log, guaranteeing a little bark gets in there. Or the old coat hanger which may or may not be painted depending on the draw, meaning you most definitely ate melted paint at some point in your childhood. Whether you like your marshmallow firm and fluffy or a flaming, charred carbon bomb, this Imperial Milk Stout will take you back. Get cozy in that sleeping bag while we get a round of Kumbaya in with the guys over at Mikerphone Brewing.

Barrel Aged Imperial Stout - 14.4%   Our Imperial Stout brewed with Maris Otter and copious amounts of English Chocolate and Crystal malt. Decadent, thick and a balance between roast and chocolate. Aged extensively in freshly dumped spirit barrels.

Barrel Aged Breakfast Porter - 13.2%   It’s that time of year again. That special weekend where we aim to both indulge your inner child with waffles and cartoons, while simultaneously condoning your adult desire to drink Imperial Breakfast Porter at 11am. It’s also one of our favorite events, as we get to see all those folks who have been coming year in and year out, dressed in their finest footie pajamas and most luxurious terry cloth robes, in peaceful repose. The result is a way to start your day that, well, pretty much becomes the day. This batch has been snuggled up in a Laws Four Grain Straight Bourbon barrels for the past 10 months then was promptly awoken with Vermont Maple Syrup and Guatemalan Coffee from Middle State Coffee.
